That's when the magic begins! The process of making ice cream using liquid nitrogen is unique. Liquid nitrogen has a temperature of -321° Fahrenheit and begins freezing the cream or sorbet upon contact, changing the cream/sorbet temperature from 41° Fahrenheit to the perfect ice cream temperature of 17° Fahrenheit. The freezing process is so fast, the cream has little time to form ice crystals, making this ice cream dense and extra creamy.
